Simple Broiled Green Beans

The is a lovely side dish, a great addition to a salad or lunch if you just want something crunchy and light.

Feeds 2-4 (depending how you eat it)

1 tablespoon olive oil
1 LB green beans (preferably organic and in-season, trimmed/washed)
salt/pepper to taste

Set oven to broil.  Spread green beans on cookie sheet, making sure they are not over crowded.  Drizzle olive oil, sprinkle with salt/pepper and gently toss to coat by shaking the pan.  Broil on first or second rack from top for about 10 minutes.  Beans should be slightly crisp and a little blackened.  Serve it up!
